Tea polyphenol, also known as vitamin polyphenol, is a kind of fused-ring aromatic

hydrocarbon, which is the general name of polyphenols in tea, including flavanols,

anthocyanins, flavonoids, flavonols and phenolic acids. Among them, flavanols

(catechins) are the most important, accounting for about 70% of the total tea

polyphenols. Tea polyphenols are one of the main components that form the color

and aroma of tea, and are also one of the main components that have health care

functions in tea. Tea also contains phenols, which together with polyphenols are

called phenolic content in tea.
